If it's enrolled before it went to the field, it gets locked and wiped remotely and you know what was on it. If it wasn't, there's little that can be done. Enrolling a device after it's gone is not a thing.
Yes, and it doesn't have to slow the crew down. A tablet meant to be shared gets set up so each person signs in as themselves, which keeps the record of who did what without anybody memorizing a password.
